Coconut Cookies




Coconut Cookies

Indulge your taste bud with these delicious crunchy Fresh homemade Coconut Cookies.

Ingredients 


Butter: 150 gms

Powdered sugar :150 gms
Refined flour: 1 cup
Dessicated coconut: 1 cup
Baking powder: 1 pinch
Egg: 1
Vanilla essence: 1/2 tsp 




Method

1. Mix butter and powdered sugar to form cream.

2. Add one egg and beat it with butter sugar cream.
3. Add vanilla essence and mix it.
4. Add refined flour, dessicated coconut and baking powder. Fold it well.
5. Now by hand assemble the mixture and form a soft dough. Don't knead with pressure.
6. Wrap the dough with clean wrap and refrigerator it for 6-7 mins.
7. Take out the dough, roll it to 1/4 inch thick. Cut it with cookie cutter.
8. Grease the baking tray and place these Coconut Cookies on it. Sprinkle one pinch of dessicated coconut on each of the cookies. Press it lightly.
9. Preheat the oven at 160 degree C for 10 mins. Bake these cookies at 160 degree C for 15 mins. 
10. Bake it till the cookies becomes light golden.
11. Take out from oven. Cool it completely and serve it or these Coconut Cookies in air tight jar. 

Note: If you want can decorate these Coconut Cookies with melted chocolate.

Chocolate Surprise Cupcake

Chocolate Surprise Cupcake 




Delight your taste buds with these chocolate cupcakes with little chocolate piece inside which surprise your kids and guest with each bite.


Preparation for approx 15 small size cupcakes

Ingredients

Flour: 1 cup
Cocoa powder: 4 tbsp
Baking Powder: 1/2 tsp
Butter: 1/2 cup and 2 tbsp (120 gms)
Powdered sugar: 1 cup and 3 tbsp (180 gms)
Milk Chocolate Bar: 1
Eggs: 3
Vanilla essence: 1/2 tsp
Salt: A pinch
Milk: 1/3 cup ( room temperature)








Method

1. Sieve flour, cocoa powder, salt and baking powder trice.

2. Mix butter and powdered sugar till light and fluffy and looks like cream

3. Beat eggs with vanilla essence to stiff froth ( when you lift the beater then egg drops and stays on the top of the froth).

4. Add beaten eggs to the butter cream mixture little at a time and beat it.

5. Fold in flour by cut and fold method and add sufficient  milk to bring the mixture to a dropping consistency. 

6. In the muffin cups add little bit of batter then in the center add a milk chocolate cube and top it up with the batter again. Fill 3/4 of the cups.

7. Preheat the oven at 180 degree centigrade for 10 mins. Then bake the cupcakes at 180 degree centigrade  for 15 to 20 mins. Check the cupcakes with tooth pick by pricking it in the center.  


Note: If you are baking it in microwave then convection mode for 12- 15 mins. Sieve the flour minimum trice. 

Decorate the cupcakes with butter cream icing and serve it to your kids or guests.
