Coffee Cupcakes

Today I like to share a very easy to make recipe of Coffee Cupcake. Cupcakes are small in size and you grab it any time whenever you feel hungry. There are many varieties of cupcakes. I love the taste and aroma coffee. These Coffee Cupcakes are ideal for coffee lovers and also goes very well with a hot cup of Coffee.

Coffee Cupcake
































Ingredients

Flour/ Maida: 1 cup

Cocoa powder: 1 tbsp
Instant coffee: 2 tbsp
Baking powder: 1/2 tsp
Unsalted Butter: 1/2 cup and 2 tbsp
Powdered sugar: 1 cup and 3 tbsp
Eggs : 3
Coffee Essence : 1/2 tsp
Salt : A pinch
Warm milk: 1/3 cup



Method


1. First sieve the flour ,cocoa powder, salt and baking powder 2 times.

2. Take bowl, add butter and powdered sugar. Beat it till it becomes light, fluffy and creamy.
3. In another bowl , break the eggs and add coffee essence. Beat till it turns to stiff froth.
4. Add the beaten eggs to the butter mixture little at a time and beat it.
5. Take a small bowl , add warm milk and instant coffee powder. Mix it well.
6. Add the sieved flour and coffee mixed milk. Fold all together to bring the mixture to a dropping consistency.
7. Preheat the oven into 180 degree centigrade for 10 mins.
8. Pour the cupcake mixture into the muffin cups and bake at 180 degree centigrade for 15- 20 mins
9. Take the Coffee Cupcakes out of the oven and cool it on a wire rack.

Icing


Mix 1 1/2 cup icing sugar with 3/4 cup butter. Add coffee essence and 1 tsp coffee powder. Beat till light and fluffy. Optional (Divide the mixture into two bowl. Add your favorite colour and mixture well). Use the piping bag and decorate the cupcake.
